In 2016, Oliver expanded his portfolio to include traditional Italian spirits, recognizing that Italy’s spirits are as diverse and regionally distinctive as its wines. Applying the same rigorous standards he uses for wine, Oliver seeks out spirits crafted by smaller producers who use only high-quality, natural ingredients. These producers maintain full control over the process, creating infusions in-house with real ingredients (no artificial flavorings). By working with producers who are true specialists in their field, Oliver ensures every product is both authentic and of the highest quality.

Oliver McCrum’s portfolio of Italian spirits includes a selection of aperitivi, a cornerstone of Italian drinking culture. The term aperitivo derives from the Latin word aperire, meaning "to open.” Aperitivi are traditionally enjoyed before a meal to stimulate, or open, the appetite. Oliver’s collection includes a variety of aperitivi styles:
• Vermouth: Herb-infused wine fortified with alcohol to 18–20% by volume and sweetened according to style. Variations include Sweet (red), Dry (white with less sugar), and White (slightly sweeter than Dry).
• Aperitivo: A slightly sweet, herb- and spice-infused spirit with an alcohol content of 11–20% by volume, perfect for pre-dinner drinks or cocktails.
• Bitter: A robust infusion of herbs and spices, typically higher in alcohol (20–30% by volume) and less sweet, ideal for cocktails like the Negroni.]
