We love the wines of Domaine Matin Calme. We've been working with this producer since the 2008 vintage. Each year, Anthony Guix manages to craft honest wines that taste true to the vintage and terroir while also showing a lively and wild side. The wines are delicious and super easy to drink...in other words, they are dangerous for the wallet!
Domaine Matin Calme was started in 2006 by Anthony Guix when he and his former partner Véronique Souloy bought an extraordinary vineyard of Carignan and Grenache vines that are more than 100 years old around Bélesta in Roussillon. In the soils of granite, schist, and gneiss at 1,500 feet of above sea level, Matin Calme is able to grow fully mature grapes of great density and acidity without developing wines of high alcohol. Today, Anthony owns 5 hectares with vines ranging from 30-100+ years old.
Anthony works the land organically by hand and is certified by ECOCERT. The soil is tilled by hand, and the fruit is manually harvested. The yield is very, very small at 20 hl/ha. In the winery, the fruit is gently pressed in a vertical press. The wine is never pumped, and the fermentation is spontaneous with native yeast. Sulfites, or other additions, are not used in the fermentation process. A very small amount of sulfites is sometimes added at bottling for stabilization; this is only done in poor vintages. There is no fining or filtration whatsoever.
