Pascal Doquet farms just under 9 ha of old-vine chardonnay in Vertus, Le Mesnil-sur-Oger, and Le Mont Aimé, including the prized “Champ d’Aoulettes” parcel. Certified organic since 2010, Pascal’s focus is on vineyard health and terroir transparency—minimal intervention, cover cropping, and ultra-light equipment to avoid soil compaction.

Harvest is by hand with strict triage. Indigenous yeasts, long aging on lees, and minimal bâtonnage define the cellar work. Most wines see full malo and at least 3 years aging before release. A portion of the vintage “Coeur de Terroir” wines are vinified in neutral oak.

These are sharp, mineral-driven Champagnes with structure and lift—Côte des Blancs purity - “sans maquillage” (no make up).
