Paul Giraud is located in the picturesque village of Bouteville in the heart of the Grande Champagne region of Cognac. This village, nestled in the hollow of the valleys of the first growth of Cognac, is renowned for the finesse of its eaux-de-vie. The Giraud family has been producing exceptional Cognac since the mid-1600s. and today has some of the oldest stock of cognacs in the region.
Paul Giraud gives priority to ancestral know-how to best serve the expression of his terroir through authentic Cognacs that are not made from blends from different years. For him, a great Cognac starts in the vineyard. Therefore, each Paul Giraud Cognac is single vintage and estate grown. The estate's 42 hectares of Ugni Blanc are harvested by hand to preserve quality (Giraud is one of the last in the region to manually harvest).
The vinification and distillation are both done at the estate. There are two alembic stills at Paul Giraud; one capable of 14 hectoliters and the other 18 hectoliters. This allows for the distillation of Ugni Blanc harvested from different plots. The eaux-de-vie age in oak barrels in very humid cellars on the estate. The style of Cognac Paul Giraud is one of finesse and suppleness with aromas of flowers, fruit, and spice.
