Moulin de Gassac is produced by the Gilbert family of Mas de Daumas Gassac. The Moulin de Gassac Giulhem wines pay homage to the patron saint of Saint-Guilhem-le-Désert, a picturesque village attracting visitors from around the globe. These wines are vibrant expressions of the Mediterranean terroir from which they originate.

In the early 90s, Aimé Guibert's discovery of the exceptional amphitheater site of Villeveyrac led to a collaboration with local vine growers, saving their vineyards from being uprooted under government incentives. The creation of Moulin de Gassac and this partnership has played a crucial role in preventing the disappearance of this rocky hillside terroir.

The red wines showcase a distinctly southern character and are sourced from the hills of Villeveyrac, an amphitheatre of vines facing the Mediterranean and the port of Sète. The clay-limestone soil (rich in bauxite and therefore in iron) is dry and well-drained. The terroir enables the grapes to reach full maturity, with a superb concentration of flavors and a naturally reduced yield.

The plots for the white and rosé wines are selected from the area around the Thau Lagoon (Étang de Thau), near the village of Pinet. The soil is clay-alluvium with a small quantity of pebbles. This quality terroir benefits from the influence of the Mediterranean, producing wines with a remarkable freshness.

The entire vinification process is meticulously managed by the Guibert family. The growers in Villeveyrac and Pinet share their desire to offer authentic wines and farm their plots with respect to the environment and its biodiversity. Since 2000, all the wines have the Terra Vitis certification.
