Imakoko is made by the Kikusui Brewery located in Iida City in the Nagano Prefecture in central Japan. Kikusui is the only Japanese sake brewery in the southern part of the Nagano Prefecture. Nestled between the southern and central alps, the area enjoys four seasons. Surrounded by bountiful nature, Iida City has a rich fruit cultivation heritage and provides the perfect backdrop for sake brewing and shochu distilling.
Solar panels have been installed to power the distillery. Kikusui uses water from the Sarukura no Izumi (Sarukura spring). This water source has been certified as one of the 100 best waters in Japan by the Ministry of Environment. It is said that Sarukura no Izumi was founded by Shuzo-an Ryukei, a scholar who traveled all over the country in search of water suitable for tea during the Edo period, and is characterized by a flavor that is refreshing and has a subtle sweetness. The water is cool, soft and very good. The spring is located in the northwest of Iida City. Japanese tea ceremonies are frequently held at this spring.
