Osborne Very Old Rare Sherries are a treasure inherited from years and years of patience, devotion and hard work. The complexity and soul of these wines are unique and unparalleled. The solera of this wine was set in 1790, and has an average age of 30 years.
Winemaking Notes: The Palomino grapes are gently harvested by hand and carried in small boxes to avoid damages to the grapes. Then, they are softly pressed, followed by fermentation at a controlled temperature of 24ºC/75ºF. Once the wine achieves 11%-12% abv, wine spirit is added up to 17% abv. The fortified wine is then transferred to 500-liter American oak casks, where it ages through the unique system of soleras, for an average of 30 years. The special microclimate in El Puerto de Santa María, where Osborne's winery is located, allows this oxidative aging process to occur smoothly, imprinting its marvelous personality on the wine.
Tasting Notes: Nutty and dry. Lovely brilliant amber color with green highlights. Aromas of hazelnuts mingle with oak notes. It combines the vinosity and full-bodied characteristics of an oloroso with the delicate and pungent nose of an amontillado. Dry and elegant, with a long lasting finish of dried fruit and spicy oak.
