Production notes:
Picked over a two-week period in October. Each lot pressed separately with gentle and extended press cycle > 4hrs to get a hint of skin contact. Cinsaut foot-treaded and left on skins for 24hrs prior to pressing. Co-fermented in stainless steel with some neutral oak and aged on fine less for 6 months prior to botlling.
