Production Notes: Aromatic white varieties are harvested at optimum ripeness and lightly pressed. The free-run juice becomes wine while the pomace, which still holds a high percentage of juice, is used for the grappa. The pomace is immediately covered with water to prevent oxidation. It is then fermented with yeast selected for optimum aromatic expression. The pomace is so lightly pressed that it often reaches 15-16 brix when rehydrated.
After fermentation is complete, the wine distills in Ransom's hand-hammered alambic copper pot still. Only the heart of hearts, the very best portion of the distillate, is retained for this special bottling. Although grappa is Ransom's most limited production spirit, it also holds a special place in the distillery's history; it was their very first offering back in 1997, and they've been making it ever since.
Distillation Notes: The Ransom Grappa is pot distilled in Prulho 265-gallon and 660-gallon alambic copper stills. All cuts are made by smell and taste.
Tasting Notes: The Ransom Grappa is carefully crafted to an unparalleled standard of quality. It is an elegant, effusive expression of both the varietal character of the grapes and the time-honored traditions of fermentation and alembic distillation. An ethereal, inviting nose showcases elderflower, heirloom pear, and tea rose. The aromas deftly carry over onto the smooth and sumptuous palate. Hints of stone fruit and cassia show on a long, elegant finish.
