Fruit Source: The Joie Sans Souci alcohol removed wines come from Domaine La Colombette in Beziers in the Lauguedoc region of France. Domaine La Colombette has been a family estate for 4 generations. All vineyards are certified organic, and the grapes are always harvested at night. They follow taste, tradition, and the patient rhythm of the land.
Winemaking Notes: This winery has been making de-alcoholized wine since 2003. They have experience with the process and have advanced equipment to produce superb non-alcoholic wines. The whole process starts with their estate grapes. Then, they use a combination of reverse osmosis and vacuum distillation to remove the alcohol from the wine. The wine is made sparkling via a light gasification, all carefully controlled for consistency. No additives, no fake sweetness.
Why Souvignier Gris? For one essential reason, disease resistance and the promise of a truly pesticide-free vineyard. Souvignier Gris is a PIWI grape.
