Winemaking Notes: All of the grapes were manually harvested separately at optimum maturity, crushed, and then pressed. The must fermented in temperature controlled stainless steel tanks. Each variety vinified separately. The blend was made as soon as the fermentations ended. Then, the wine aged on its lees with periodical stirring for 4 months.
Tasting Notes: The nose showcases citrus and floral notes with some subtle savory notes. The palate offers ripe stone fruit with hints of tropical fruit, complemented by a slightly oily and briny texture. There is white pepper on the finish. This white blend manages great tension between ripe fruit that is also bright and fresh.
Terroir Notes: Beykush's 11 hectares of vines are located in the village of Chornomorka in the Mykolaiv region, 330 feet from the Black Sea coast of Ukraine. The vineyards are on the Beykush peninsula, on the extreme southeastern edge of Ukraine, and are highly influenced by the Berezan Estuary on one side and the Beykush Bay on the other. Beykush employs principles of organic viticulture. The vineyards are wedded by hand, and the soils are only fertilized with organic substances such as cow dung.
