All seven indigenous varieties are planted in the central valley of Verzy, where chalk sits about one meter below the surface. Soils are composed of silex with chalk and clay. This is the site where Sébastien began his agroforestry work. Chardonnay vines average 70 years of age, Pinot Noir around 35 years, with the remaining varieties planted between 2013 and 2014.

Fermented with indigenous yeasts and completed through full malolactic. Aged 8 months in used Cadus barrels.

Aged for 48 months on the lees; dosage 1 g/L; disgorged April 2024
