Vineyard Notes: The Airen grapes come from Esencia Rural's estate and farm near Toledo and, like all their crops, are organically grown. Many of the vines are extremely old, ungrafted, dry-farmed, bush-vines. The soils are on sandy and calcareous with some clay.

Winemaking Notes: Grapes are hand harvested followed by spontaneous yeast fermentation and maceration on the skins in steel tanks for 3-4 months followed by aging in amphora for an additional 2 months. The wine is slightly filtered and unfined, and only a low dose of SO2 is added at bottling.
