Terroir Notes: A three minute drive down the road from Château Cheval Blanc, in the heart of the Saint-Émilion appellation, sits the 9-hectare estate of Château Haut-Ségottes. The 9 hectares are all planted within the Saint-Émilion Grand Cru appellation. The vines are around 40 years old and Guyot trained. They are farmed organically, using only copper sulfate and essential oils when necessary as treatments.
Winemaking Notes: Harvest is manual. After sorting and destemming, the fruit ferments with indigenous yeast in concrete tanks. Malolactic fermentation occurs spontaneously. Following a three week cuvaison, the wine is separated from its lees. It ages for around 18 month in a mix of 225-liter and 400-liter barrels (new, 1st year, 2nd year).
Tasting Notes: Although the majority of the vineyards are planted to Merlot, the Château Haut-Ségottes Saint-Émilion Grand Cru features mostly Cabernet Franc. This dominance of Cabernet Franc (frequently on the order of 60%) produces a wine of considerable structure.
