While Pingus seeks to explore the upper limits of Tinto Fino (Tempranillo), Ψ Psi aims for something subtler yet equally profound: capturing the soul of Ribera del Duero.
The project begins with the region’s old, head-pruned vineyards. Many of these historic parcels contain a natural field blend, and Ψ Psi honors this heritage by incorporating up to 10% Garnacha along with small amounts of other local varieties, including whites such as Albillo.
Ψ Psi is built as a growers’ cooperative initiative designed to elevate farming practices, achieve healthy and balanced fruit, and preserve the region’s old-clone, labor-intensive, head-pruned vineyards. It is also intended to improve the economic reality for the area’s farmers and highlight the true potential of Ribera del Duero. Historically, growers were paid by the ton, which incentivized high yields over quality. Heavy chemical use became common, giving weight to Claude Bourguignon’s stark comparison that many vineyard soils in the region had “less microbial life than the Sahara Desert.”
Peter’s team provides each grower with support in organic and biodynamic farming, including locally made preparations. They offer technical guidance without being didactic, and as quality rises, they reward growers with higher fruit prices.
In the cellar, the team employs long, gentle macerations to achieve the most harmonious extraction possible. Élevage is intentionally relaxed, carried out in a mix of used barriques, large wooden vats, and cement tanks, with virtually no new oak. Macerations last more than 30 days with punch downs, followed by approximately 18 months of aging in used barriques and large casks. With minimal adornment, the wines offer a transparent view into the vineyards. Since the project’s debut in 2007, the steady rise in quality stands as one of the clearest demonstrations of how organic viticulture can produce wines that are more expressive, more balanced, and more harmonious over time.
