Why Piloncillo? Sugarcane thrives in the volcanic, mineral-rich soils of the Valles de Jalisco. However, the harvest season lasts only about four months each year. To maintain production year-round, Alto Valle works with local families who craft piloncillo —a traditional, unrefined sugar made from pure cane juice. Using piloncillo preserves the true character of the sugarcane, yielding a vibrant, fresh, and light-bodied rum layered with notes of pineapple, citrus, wet earth, and a touch of spice on the finish.

Piloncillo is produced by boiling fresh sugarcane juice until thick, then pouring it into cone-shaped molds to harden. In Latin markets, it’s often labeled as Mexican brown sugar cones or Mexican sugar cones. The name derives from pilón , Spanish for “cone,” a nod to its iconic shape and centuries-old method of production. Unlike refined white or brown sugar, piloncillo is never centrifuged—meaning it retains its natural molasses, minerals, and depth of flavor.

Tasting Notes: Enjoy aromas of spun sugar, pineapple, and hints of saline. The palate shows wet grass, earth, citrus, floral notes and a pink peppercorn spice finish. Texturally pleasing, the rum is light, fresh and clean.
