Winemaking Notes: This Sauvignon Blanc comes from the villages of Sancerre, Chavignol (near Monts Damnés), Bué, Verdigny and Amigny. Grapes are manually harvested. Traditional vinification occurs in temperature-controlled stainless steel tanks. The wine ages on its lees for about 10 months before bottling.
Tasting Notes: This special cuvée made by Jean Mounard and Marc Vappereau is a pure Sancerre with incredible freshness and minerality. It stands in contrast to some productions which tend toward richer, heavier wines often with residual sugar. It has a good depth, lovely, citrus fruit, and a classic flintiness on the nose and palate. Serve with salmon or other fish.
