This is an all natural sparkling sake. The rice is naturally cultivated. The bubbles are naturally created, namely by straining the brew roughly so some of the brewing mass is still in the bottle for the second fermentation. Pure and naturally produced sparkling sake is always cloudy (nigori) sake.
Hot Yamahai Starter Method: Kidoizumi is the only brewery in Japan that employs the unique hot Yamahai method to initiate fermentation. This distinctive technique was developed and introduced by the brewery’s third-generation master brewer in 1956. It begins with heating the mixture to 55°C (130°F), an ideal temperature for sugar development, which encourages a high sugar yield early in the process. However, this elevated temperature is too hot for yeast to survive. To address this, the brewery sprinkles cooler water over the top layer, lowering its temperature just enough for yeast to take hold. Over the next two days, the mixture is gradually stirred and cooled to further support yeast proliferation. Once the temperature stabilizes at 25°C (77°F), the batch is kept at this level for a full week. An insulating mat is wrapped around the tank, allowing the natural heat from fermentation to maintain this constant temperature. After another week of steady fermentation, the starter is fully ready.
