Clos des Fous 2021 'Grillos Cantores' Cabernet Sauvignon, Cachapoal

Vineyard Notes: Grapes come from a single vineyard, the Grillos Cantores vineyard, in Cachapoal, planted in 1993. The vineyard is located at 1,380 feet above sea level and is planted to carbonated alluvial soils.

Winemaking Notes: Grapes are hand harvested and then destemmed. After a 10 day cold soak, the wine is fermented with native yeasts in concrete and stainless steel tanks. Lees contact lasts 18 months.

Tasting Notes: The wine shows Cassis, leather, and baked berry compote on the nose with kirsch and baking spices on the palate. A classic Cabernet Sauvignon.
