Winemaking Notes: The grapes are manually harvested at optimal maturity. The Carignan is vinified with whole cluster carbonic maceration in order to extract intense aromas and flavors. The Syrah and Grenache are vinified traditionally with destemming and 20-30 days of vatting. The wines age in concrete tanks for 12 months before blending and bottling at the château.
Tasting Notes: Le Tigre red wine shows cassis and raspberry with hints of pepper and spice on the nose. The palate is structured and smooth with fresh fruit flavors. Nice acidity provides freshness on the finish. Try Le Tigre with duck, lamb, beef and pasta dishes.
Farming Notes: Château des Adouzes is certified HVE 3 (Haute Valeur Environnementale level 3), which is the highest level of France's Environmental Value certification. It is a result of their efforts towards virtuous agriculture: planting 2,000 trees to preserve biodiversity, planting vineyard ground cover, pheromone dispensers, manual weeding, non-irrigated vines, etc. This certification complements their existing carbon neutral approach: to limit their impact on the planet, the Coste family has reduced their CO2 emissions to a minimum. They offset the rest by financing ecological initiatives.
