Terroir Notes: Dancing Crow is not a typical style of New World Sauvignon Blanc. Because of the unique soil, climate, and altitude, the grapes are able to be harvested at 20-21 Brix. This results in the wine having a 12-12.5% alcohol content while retaining the full flavor and complexity of the grape, which is rare in California for Sauvignon Blanc.

Winemaking Notes: After pressing the grapes, the juice settles for three days before being racked for fermentation. Cold fermentation and lees stirring are employed to further the process by adding length and texture.

Tasting Notes: The Dancing Crow Vineyards Sauvignon Blanc has aromas of freshly cut Bartlett pears, spring flowers and orange blossoms. On the palate, an invigorating texture is apparent with flavors of mandarin, white pineapple, and poached pear. The mouthfeel is generous and bright; the fresh acidity plays well with citrus and stone fruit flavors. Lingering minerality shows on the finish. Quite complex!

About the Label: The wine label was designed by Chuck House, co-founding partner of the famous Icon Design Group which specializes in wine branding. Chuck found the image in a catalog printed in Paris during the late 1800’s by the French illustration and type company, Fonderie Deberny & Cie. The image of the crow was tiny, so it was quite a surprise to see the character of the bird emerge so clearly upon enlargement. The interplay of expression suggests an invitation to dance. A roguish twinkle can be seen in the eyes accentuated by a Mona Lisa smile. The straw was also present in the original.
