Jinmaek Poet’s Rock Barrel Aged Soju is a distinctive expression of the distillery’s traditional wheat soju, matured in a mix of oak barrels for up to three years. The extended oak aging brings together the aromatic, spicy character of Jinmaek’s wheat spirit with the richness and complexity of barrel maturation, creating a style the distillery describes as “soju whiskey.”

Made from 100% organic, estate-grown wheat, Jinmaek draws inspiration from a Korean wheat soju tradition dating back to the 1540s. The distillery uses a slow, three-stage fermentation at low temperatures to develop the grain’s full aromatic character and depth of flavor before distillation.

Following distillation, Poet’s Rock is transferred to oak casks and aged for at least years in Jinmaek’s cave cellar, tunneled into the mountainside. The stable cellar environment encourages slow maturation, allowing the wheat spirit and oak to integrate while preserving the distinctive character of Jinmaek Soju.
