Terroir Notes: Beaux Regards is a soft, stony terroir filled with fossils in the town of Verdigny. The vines age on average over 60 years old. The Denizot Biorga Pinot Noir captures this particular terrior. The pinot has aromas of juicy red fruit over an elegant and slender palate. Its long aging under wood gives it a beautiful roundness.

Winemaking Notes: From the moment the grapes arrive at the winery, they are handled with care and respect for the fruit. The grapes are transferred to open concrete vats using a conveyor belt. They are protected with dry ice immediately upon arrival to prevent oxidation of the juice and control the harvest temperature. Cold maceration lasts approximately 7 days, depending on the vintage. Natural fermentation occurs with indigenous yeasts over a period of about fifteen days. The number of pump overs and punch downs is determined by the vintage and daily tasting of the juice. The wine is racked when all the sugars have been converted into alcohol. The free-run juice is then transferred to 228-liter barrels (1/3 two-year-old, 1/3 one-year-old, 1/3 new) from various coopers. A minimum of one year of aging is required to allow for malolactic fermentation, which occurs naturally in the barrels.

    The 2022 Biorga hails from 70-year-old vines. The result, which spent two years maturing in barrel, concrete tank and bottle, is serious, savory and smoky. Its oak it evident, but there's a lovely savoriness to this young wine. This has excellent freshness despite its richness. The tannins and texture are the stars here. You know this is going to evolve thanks to its concentration and structure. The 2022 has plenty of personality and guts.
