Vintage Notes: The 2021 vintage was extremely dry and temperate. After a 2020 vintage with a record rainfall, the cycle began with the soil water reserves well filled. The entire cycle was short of rainfall and the usual temperatures, with a cold winter and mild spring with no heat waves. The reserves from the previous cycle and the good soil structure helped the plants to have a good borate and a good vegetative development without any fungal pressure. The heat wave arrived at the beginning of the summer and lasted through July. We had a drop in production due to the drought, a healthy harvest drought, a healthy and concentrated harvest. Throughout the agricultural year the entire crop year we had a high rainfall of 326 mm (the average for the last 20 years is 517.8 mm). The average temperature was 15.2 °C, similar to the average of the last 20 years.
Winemaking Notes: Manual harvest on September 14 with 15 kg. crates. Grape selection in the vineyard. Once harvested, the grapes are lightly crushed and trodden. Spontaneous fermentation with native yeasts from the vineyard in a Qveri in the Mas’s garage. Fermentation begins on 16/09 and ends on 30/09, the day we bleed. We do not press. During fermentation we make light pigeages to wet the cap without extracting too much tannin. We do not control the fermentation temperature, the temperature does not exceed 27 °C. After de-vatting, we fill two old French oak barrels. Malolactic fermentation takes place naturally. Aging takes place during the winter and spring months where the wine stabilizes naturally. Bottled on July 6, 2022. We do not use any oenological additives at any stage of the process.
