The Four Grapes: Les Quatre Cépages from Domaine de Pajot is a dry white wine from the region of Côtes de Gascogne in South West France. Colombard, Ugni Blanc, Sauvignon Blanc, and Gros Manseng all grow in this region. The varieties are different but complementary. The different grapevines grow in stages making the work in the vineyard easier to organize and more efficient, plus better resistance to diseases over the growing season. During the harvest, grape gathering is gradual, allowing time to carry out the vinification process in good conditions. But above all, these varieties grow perfectly in this area, and each one contributes a specific aroma that is quite nice to blend.
Tasting Notes: The four grape varieties beautifully blend together to create an aromatically stunning wine of citrus and exotic fruit with hints of boxwood. The wine is very refreshing and thirst quenching. Les Quatre Cépages can be served as an aperitif or to accompany ham, salami, white meats, mild cheeses and of course fish and seafood.
Organic Farming: Cover crops (beans, cereals, etc.) produce organic matter that feeds the soil and vines. Biodiversity on the property is also strengthened by agroforestry: return of trees in young plantations.
