The Coste family has been working on their "Zero" project for two years, conducting extensive benchmarking and tasting numerous 0% wines to understand the market. To maintain the highest quality, they use only estate-grown grapes, giving them full control over the production process. The winemaking process mirrors that of their traditional wines, ensuring a familiar and authentic taste profile. The wine is then sent to BevZero, an American company operating in Spain, where it undergoes dealcoholization. BevZero, known for its innovative approach to alcohol-free products, utilizes vacuum distillation—a minimally intrusive method. The still Zero Rosé is bottled at Domaine Montrose, while the Montrose Zero Sparkling is sent to a specialized facility near Marseille, where CO₂ is added via the Charmat method before bottling.
