Yeast Notes: Derived from Association #10 yeast and developed by the same brewery, M310 (also known as Meiri Yeast) was initially created in 1992 and later introduced nationwide in 1995. However, it was never classified as an Association Yeast but instead made available through the Ibaraki Prefectural Food Research Institute. Similar to #10, this yeast exhibits low acidity and robust fermentation capabilities at lower temperatures. However, it distinguishes itself by producing significantly higher levels of ethyl caproate compared to its predecessor. It gained popularity for crafting daiginjo grade sake, particularly for the Annual Japan Sake Awards. The name M310 cleverly combines Japanese wordplay, where "mi" represents three and "to" denotes ten, referencing the Meiri Brewery's hometown of Mito in Ibaraki Prefecture.
