This is 100% natural Cabernet Sauvignon from the vineyard to the bottle.

Vineyard Notes: The 3 hectares of Cabernet Sauvignon were planted in 1999. Manuel recalls giving the new plants a bucket of water once a week during the hot season for two years. By the third year they adapted to dry farming just like the rest of his old vineyard. Manuel thinks these might be the most southeastern Cabernet plants in Chile that produce wine. The Cabernet vines are the first to harvest at the end of February.

Winemaking Notes: Grapes are destemmed and then spontaneously ferment with native yeast in open lagar (massive foudres of raulí, a Chilean beech). The wine is bottled unfined and unfiltered.
