Farming Notes: Since 2020, all the wines from les vins d’Athénaïs have been certified organic.

Terroir Notes: The grapes are produced in the Yonne in the town of Saint-Bris. The plots are oriented east, south and south-west.

Winemaking Notes: The grapes are manually harvested and gently whole cluster pressed. Fermentation occurs with indigenous yeast. The wine ages for 18 months in stainless steel vats without input.

The 2021 Bourgogne Blanc, which is actually a Cote d'Auxerre, yielded just 8ha/hl. It has a very potent nose with custard cream, nougat, white flowers, and light flor-like notes. It comes across distinctly as a Vin de Nature. The palate has a twist of bitter lemon on the entry. Fresh and quite tangy with marmalade, peach and stem ginger touches towards the finish.
