Calvados Pays d'Auge AOP is a fruit brandy created by distilling a cider, which in turn is made from apples harvested from orchards in Normandy (Pays d'Auge) and fermented using traditional methods. The Dupont Calvados Hors d'Age has aged 6 years minimum in 400-liter oak barrels, with 25% of new oak.
Production Notes: The apples are mixed, crushed, and pressed. The apple juice is fermented to cider to be distilled. Cider destined to become Calvados is aged six months on its lees to enrich its aromatic expressiveness. Double distillation is carried out one month after the fermentation has taken place. The first distillation gives the "petite eau" at 30% by volume. It is the second distillation where the "petite eau" creates Calvados.
Tasting Notes: The nose is lightly wooded with great complexity of aromas including apple, banana, rose, and jasmine. Swirling opens up more intricate flavors in this lovely and balanced Calvados. Drink as an aperitif or digestif: on its own, over ice, or with a drop or two of water to let it release its aromas.
