Calvados Pays d'Auge AOP is a fruit brandy created by distilling a cider, which in turn is made from apples harvested from orchards in Normandy (Pays d'Auge) and fermented using traditional methods. The Dupont Calvados Vieille Reserve (old reserve) has aged 4 years minimum in 400-liter oak barrels, with 25% of new oak.
Production Notes: The apples are mixed, crushed, and pressed. The apple juice is fermented to cider to be distilled. Cider destined to become Calvados is aged six months on its lees to enrich its aromatic expressiveness. Double distillation is carried out one month after the fermentation has taken place. The first distillation gives the "petite eau" at 30% by volume. It is the second distillation where the "petite eau" creates Calvados.
Tasting Notes: The nose has notes of fresh oak, vanilla, and candied fruit. First sensation is sweet and soft with notes of fresh licorice. It ends with citrus while the empty glass offers vanilla, citrus and hay. Drink as an aperitif or digestif: on its own, over ice, or with a drop or two of water to let it release its aromas.
