Vernaccia di San Gimignano is the great white wine of Tuscany, if not all of Italy. Vernaccia is said to be the red of white wines: the grapes may not yield highly fruited bouquets, but the wines are vigorous and long-lived. They are mineral wines of great power and structure that profit from wood and display excellent aging capacity, with their bouquets gaining interesting secondary aromas with the passage of time in bottle.

Terroir Notes: Around 4 million years ago, San Gimignano was submerged by the Ligurian Sea. Thus, the Pliocene soil is filled with marine fossils and clay; the mineral composition is perfect for white wines.

Winemaking Notes: Elisabetta Fagiuoli produces three distinct Vernaccia wines. The same bunches, depending upon how they are fermented, will yield different structures and flavors, making for different wines that do share a common identity. The grapes for Carato are sourced from the stoniest vineyard parcels. Manually harvested, the grapes are then placed in the basket press at the winery. Only the free-run must is used for Carato. The wine is then barrel fermented (neutral barrels) and aged on the lees for 12 months. The wood contributes to the complexity of the secondary aromas, developing over time a richness of flavor that brings to mind citrus, honey, and candied fruit. Carato shows the terrific aging potential of the Vernaccia grape.

Food Pairings: This wine pairs perfectly with creamy cheeses and rich dishes. Try it with sophisticated ingredients such as white truffles. It is also ideal for refreshing the palate after a meal with fuller reds.
