Daniel-Etienne Defaix 2020 Chablis Vieilles Vignes AOC

Defaix produces a village-level Chablis from a smattering of holdings around Chablis itself, rounded out by excess fruit from his premier crus. These plots, with vines between 50 and 75 years of age, yield a wine of great typicity, combining Kimmeridgian salinity with a certain open-knit generosity of texture in true house fashion. Although it does not see the decade-plus of cellar aging that the premier crus do, the “Vieilles Vignes” spends two winters on its fine lees in tank, plus additional time in bottle, thereby reaching the market in harmonious condition.
