Viticulture: Bonavita practices organic farming. There is no use of chemical fertilizers, no use of herbicides and no use of insecticides. A supply of organic matter through green manure of legumes and grasses is added to promote soil health. Prudent green pruning interventions are used to limit the pesticide treatments carried out at low doses of copper and sulfur to the strictly necessary. Excess bunches are thinned only if necessary.

Winemaking Notes: The grapes are manually harvested at the end of September. They macerate on the skins between 12-18 hours. The wine ferments spontaneously with native yeast. It matures for 6 months in stainless steel before bottling.

    The 2022 Rosato appears far more red than rosé in the glass. An enticing bouquet blends sweet strawberries and spices with rose petals and wet stones. This is a total pleasure, soft and enveloping, mixing ripe melon and nectarine with ginger nuances. A brisk, acidic core maintains lovely freshness. It finishes crisp and long, with a cranberry-like concentration, yet leaves the mouth watering for more as sour cherry notes fade. As is usually the case with the Bonavita Rosato, as good as it is today, this wine can easily evolve over two to three years in a cold cellar. Simply stunning.
