Winemaking Notes: Grapes are harvested by hand. Destemmed grapes go through carbonic maceration for 20 days in 5,000-liter stainless steel tanks. Final fermentation and aging takes place in 60% used 225-liter and 300-liter French oak and local chestnut barrels, 20% 500-liter and 600-liter foudres, and 20% 300-liter amphora. Perill Noir ages in bottle for a minimum of 24 months before release. Bottled unfined, unfiltered, and with zero additions of SO2.
Tasting Notes: Perill Noir Carinyena is a juicy, intense and deep wine. It is very aromatic on the nose showing fresh red fruit and light spicy notes. The palate is lively with volume and freshness.
Label Notes: The label is a replica of a painting by Manel's grandfather.
