Farming: organic, all grapes were grown in Yamagata Prefecture and were harvested manually
Winemaking: Steuben is divided into two halves, one with is de-stemmed and left on skins for 6 days. The other half is left on skins for 12 hours. Niagara and Rosario Bianco are left whole cluster and co-fermented in amphora. The Delaware was left on skins for 12 hours. After fermentation is complete, the juice is blended and left to age in stainless steel before bottling.
