Vineyard Notes: Gist Ranch is 15 miles from the Pacific Ocean. The soil is Vaqueros sandstone, which is sedimentary in nature and quartz rich. It is highly porous but remarkably resistant to erosion. Gist Ranch is one of the only/few Cabernet plantings on the Pacific plate in the Santa Cruz Mountains. The Cabernet clones in the vineyard include 4, 15 and 337. Farming is organic in nature; winter cover crops, compost and teas are used to encourage micro-flora and fauna. Fogarty refers to this farming methodology as an "intensive living-soil philosophy."
Winemaking Notes: The Lexington Cabernet Sauvignon was fermented with native yeast. Maceration lasted for 21 days. The wine was then aged for 22 months in tight grained French and American oak; 40% new.
