Domaine de Pallus 2018 Chinon, Le Clos de Pallus, AOC

About the Wine: The Clos is made from an enclosed section of vines close to the family home. This wine aims to build on Les Pensees’ strengths to render an utterly classic expression of Chinon terroir.

Vineyard Notes: Le Clos comes from the estate’s oldest vines planted at the base of La Rougerie in 1962. The soils are at a transition point in the slope and feature various mixes of sand and clay over pure limestone (“tuffeau”).

Winemaking Notes: All farming is biodynamic with average yields around 35hl/ha. Harvesting is by hand. Grapes are destemmed and fermentation, and maceration last for approximately 60 days in concrete and wooden vats. The wine ages for about 12 months in old Burgundy barrels and 6 months in tank before bottling. It ages another three years before release.
