Esencia Rural 2021 'Pampaneo' Ancestral Sparkling, La Mancha DO

Vineyard Notes: Grapes come from a selection of parcels within 38ha of estate vineyards and farmland sitting between 680-740 meters above sea level in La Mancha. The grapes are planted to sandy-calcareous soils with some clay and are farmed organically, with some biodynamic practices employed as well.

Winemaking Notes: Grapes are hand harvested, and the wine goes through spontaneous yeast fermentation in stainless steel tanks. Fermentation finishes in the bottle and the wine typically ages up to a year in bottle before being disgorged to order. No fining, filtering, or SO2 used at all.

Tasting Notes: Playful bubbles and a slightly herbaceous nose.
