Arkadia is a dry sparkling wine from a single expressive ingredient: 2.5 pounds per bottle of organically raised Maine wild blueberries harvested by hand. Winemaking is minimalist and production is small. Simultaneously forthright and complex, it’s light in body and alcohol, yet the flavors are intense, vivid and savory. Sourcing: The blueberries for Arkadia comes from certified organic growers throughout the Mid-Coast and Downeast zones, and so the wine is an ideal overall expression of the glacial-marine Maine wild blueberry regions. RAS only works with growers they like and admire as people, who treat their workers well, and manage their land with care and respect.
Winemaking: Maceration and fermentation occur with native yeast for 4 weeks and the skins intact. Pressing is slow and gentle. The wine ages for 6 month in neutral tanks with 3 periodic rackings to reduce sediment as well as give a little oxygen. It is not fined or filtered. No addition of sulfites are added. The secondary fermentation is a mix of traditions. It’s not technically pét-nat because primary fermentation completes before bottling. It’s closer to the traditional method because the wine is induced with an addition of sweetener to the fully fermented still wine in each individual bottle. But it differs from the traditional method in that RAS does not add any yeast. They riddle and disgorge the bottles after a few months of aging. Some sediment remains in the bottle.
