Winemaking Notes: Il Templare is the great white wine of the warrior monks from the Middle Ages and is to be drunk, says the rule, "as needed to distance the cold." Templare is produced from the free-run juice of Vernaccia, Trebbiano, and Malvasia. Fermentation occurs in old barriques. It is then refined in wood for 12 months before bottling.
Food Pairings: Templare has characteristics similar to white Burgundy. It is perfect with molluscs, crustaceans, and the other great fish of the high seas. It balances the spiciness of Indian dishes and the hot peppers of Mexican food.
