About Madrecuishe: Madrecuishe, sub-species of agave Karwinskii, is endemic to Oaxaca, meaning this wild agave cannot be found anywhere else in the world. This unique agave has been used for drink and food for hundreds of years and is renowned for its flavor. The Karwinskii species grows vertically, producing a skinny and long piña. Madrecuishe gets its suffix “madre” because of its potential to cross-pollinate with a number of different agave plants and produce seeds that develop into very distinct varieties.
Tasting Notes: The Origen Raíz Madrecuishe shows notes of toasted cedar mixed with raspberry shrub. The palate consists of charred green beans, tarragon and roasted agave flavors. The texture is bold and oily with spice and a long finish.
