Picofino Monastrell is from estate grapes grown organically (with some biodynamic techniques) in Villena, Alicante on sandy-saline soils. The grapes are manually harvested followed by a strict selection process.

In the cellar, the grapes are old soaked for 3 days. 1/3 of the grapes go through whole cluster carbonic maceration and fermentation with native yeasts. The rest is macerated and spontaneously fermented with skins and seeds for 7 days. The wine is bottled unfined, unfiltered, and without additions of sulfites.

Because of the semi-carbonic fermentation, Picofino is juicy, light and easy to drink. It is a fresh Monastrell that will drink well with food or without.
