Vinification: The Pinot Blanc grapes are manually harvested. The juice is extracted with infinite care; slow, gentle pressing avoids crushing the stalks and pips. Fermentation occurs with native yeasts and lasts between 4 and 10 weeks. It is carried out in temperature-controlled, stainless steel vats. Once the fermentation is finished, the wine has to be matured. This stage is essential in order to fix its structure and aromas. As the wine matures, the tiny particles in suspension gradually sink to the bottom of the vat and form a deposit, which contributes richness.

Tasting Notes: Apricot, brioche and a touch of lemon show on the nose. After aeration, the aromas of flowers, peach and the skins of grapefruit dominate. The wine is fresh with delicious minerality and acidity. It is immediately pleasurable. The classic Paul Blanck Pinot Blanc is excellent with shellfish, asparagus and mild-flavored cheeses.
