Winemaking Notes: The Xarel-lo was destemmed and skin macerated for 5 days in cement. It was then pressed and aged in the same cement vat for about 10 months before bottling unfiltered without sulfites.

About the Label: If you know anything about biodynamic farming, then you probably know it has something to do with the moon, cow dung, and how lunar cycles and animal life affect the biodiversity of a crop. Well, Finca Parera, in addition to growing grapes, also grows cherries, olives, almonds, and honey all of which certified biodynamic. Located in the Alt Penedes region a.k.a. Cava Country, Xarel-lo Vermell is the pink-skinned version of Xarel-lo (like Pinot Gris).
