Winemaking Notes: Grenache Noir, Grenache Gris, Clairette Rose, Clairette Blanche and Cinsault are picked by hand from organically farmed vineyards. Fruit is co-macerated for 5 days. Whole cluster, carbonic fermentation occurs spontaneously in stainless steel with indigenous yeasts. The Mis en Bouche Rouge is aged in neutral barrels and bottled without fining or filtration and with no added SO2.

Tasting Notes: Aromatics include maraschino cherry and cassis. Licorice and fennel show on the finish. Its juicy, light to medium body lends itself to drinking well with a slight chill.
