Tasting Notes: Gasq prefers to pick the Carignan on the early side of its maturity to preserve its vibrant natural acidity and avoid making a wine that is overly alcoholic. La Manarine Carignan showcases vibrant red fruit underscored by hints of wild herbs and earth.
Winemaking Notes: The Carignan is 100% destemmed and put into stainless steel tanks for native yeast fermentation. The wine is pumped over daily until pressing. Malolactic fermentation occurs in stainless steel. The first racking is done after malo is completed. The second racking occurs during the year according to taste. The wine is not fined but does undergo soft filtration before bottling. A low amount of SO2 is added to the wine.
