Pressed in winter and stored cold until early fall, Masumi Sleeping Beauty Hiyaoroshi acquires a patina of flavor depth while retaining its youthful freshness. It is gracefully fragrant, with balanced sweetness and acidity. Pair this sake with autumn dishes like oven-roasted fall vegetables, marinated mushroom salads and roast pork with sweet onion and hot mustard.

About Hiyaoroshi: Hiyaoroshi is the term used for sake released in the fall without pasteurizing a second time before shipping. Note that hiyaoroshi is technically the same thing as namazume as the second of normally two pasteurizations is foregone. But namazume is a purely technical term whereas hiyaoroshi has a seasonal implication as it is only released in the fall.
