Vineyard Notes: The vineyards are located in the town of Mambrilla. The vines were planted in 1987. Juan Carlos reduces yields by thinning grape clusters from 20 to 8 per vine and by allowing other foliage to flourish around the vines to absorb the potentially excessive water and nutrients from the soil.
Winemaking Notes: The grapes are destemmed and crushed after a selection of the best bunches and berries. Maceration lasts 12-15 days. Fermentation is carried out in stainless steel tanks, and malolactic fermentation takes place in barrels. The wine is aged for six months in French and American oak barrels that are two years old. Relatively short aging in used barrels allows the wine to oxygenate and become softer and rounder without the added wood tannin and spice of new barrels. This method lets the wine retain its fresh, youthful fruit characters.
Tasting Notes: Raspberry and floral notes show on the nose with an accent of incense and spice upon further swirling. Juicy and seamless in texture, Senda del Oro Roble offers concentrated red fruit flavors. The spice and floral notes carry throughout. The wine finishes with energy, clarity and silky tannins.
Pairing Suggestions: Pork and lamb, especially grilled or roasted, are ideal pairings for this wine. Beef, from steaks to more casual burgers, also works very well. If you like spices, this wine can stand up to Cajun or Midwestern BBQ. Try it with Greek gyros and dishes with Mediterranean spices.
