Vineyard Notes: The Zibibbo grapes are sourced from vineyards in Marsala, Sicily. The average vine age is 21 years.

Vinification Notes: Spontaneous fermentation on the skins with indigenous yeast lasts ten to fifteen days in amphorae. The wine then ages for six months in amphorae before being racked to concrete tanks for further refinement. COS bottles the Zibibbo and lets it rest for another three months before release.

    The 2018 Zibibbo in Pithos is a special product with no rivals I can think of in Italy. It opens to a pale-copper golden color, with an enormously fragrant bouquet that is beaming with honeysuckle, star jasmine, acacia flower and the kind of sweet almond blossoms that color the landscape around the Temples of Agrigento in the spring. You also get a touch of "zagara," which is a local word for orange blossom. All these aromas take you directly to southeast Sicily where these sun-kissed grapes are cultivated. This wine is aged for seven months on the skins in amphorae, and added dimensions and complexity are rendered by those slightly more oxidized aromas that recall caramel and dried apricot. The acidity is there, maybe the wine could use a pinch more, and you don't taste or feel much alcohol at a light 11.5%, but the results are beautiful nonetheless.

    Spicy and pungently floral, the 2018 Zibibbo in Pithos delivers an intense wave of grapefruit peel, lemon zest, ginger and hints of pine. This unique expression continues on the palate, as silky textures are contrasted by a zing of nervous acidity, tart orchard fruits and sour melon. As if a repeat of the bouquet, yet now showing through the finish, this tapers off with a salty twang of minerals and mouthwatering freshness. Zibibbo in Pithos is a wild and unique expression of dry Moscato refined in Amphora.
